delicious spiced pumpkin nut bread

this is one of the best breads i have ever tasted! it's a perfect flavor for fall (pumpkin and nuts), and it's great served fresh out of the oven or the next day. we baked a few loaves for a party here, and there was quite a bit of extra--which is great for me! i hope you make it and enjoy it, because it really is amazing!


spiced pumpkin nut bread:

4     cups flour (try whole wheat flour!)
1     tablespoon pumpkin pie spice (see below to make your own)
2     teaspoons baking powder
1     teaspoon baking soda
¾    teaspoon salt
1 ¾ cup 100% pure pumpkin
2     cups packed brown sugar
1     cup apple juice
4     eggs
¼    cup vegetable (or canola) oil
2     teaspoons vanilla extract
1     cup chopped nuts, divided 

preheat oven to 350°F.
sift flour, pumpkin pie spice, baking powder, baking soda and salt into medium bowl. combine pumpkin, brown sugar, apple juice, eggs, vegetable oil and vanilla extract in large bowl; stir well. stir in flour mixture and 3/4 cup nuts just until moistened. spoon into two reased 9x5-inch loaf pans. sprinkle remaining nuts over loaves.
bake at 350° for 60-70 minutes or until wooden toothpick inserted in centers comes out clean. cool inpans on wire rack for 10 minutes. remove from pans to cool completely.

homemade pumpkin pie spice:

3      tablespoons ground cinnamon
2      teaspoons ground ginger
2      teaspoons nutmeg
1 ½ teaspoons ground allspice
1 ½ teaspoons ground cloves
